Savoury Cake

Did anybody say cake? We all love cake, a slice of our favourite cake with a cup of coffee or tea makes life tastes a lot better. However, cake doesn’t always have to be sweet, it can also be savoury and still can be enjoyed with coffee or tea for breakfast or a snack. Ingredients: 4 large eggs 250 mils milk 200 mils sunflower or corn oil 1 red pepper diced finely 1 green pepper diced finely 2 spring onion diced finely 2 tomatoes pealed and diced same size as the peppers 2 potatoes grated Salt to taste (I usually add one teaspoon) Pepper to taste Oregano about half a spoon 400 gms sifted flour 20 gms baking powder 300 gms feta cheese crumbled Method After grating the potatoes squeeze them very well to get rid of the water In a bowl add the grated potatoes and all the diced vegetables and mix them really well Beat the eggs and add them to the mixture stirring well Add the remaining ingredients and make sure everything is well mixed together Oil a 30 cm oven dish Pour the mixture and bak...

Nina's Kitchen - Fegato Alla Milanese

  Fegato alla Milanese (Liver Milan style) One of my earliest childhood memories was of my Armenian grandmother making this incredible dish. As you will have noticed, the dish originated in Milan, along with all other rich Italian foods as a result of that city's prosperity. Over the years, I've been fortunate to visit Milan countless times for business and pleasure and I always order this tasty dish because of the happy memories it invokes. Ingredients: (for 2 people) 4 slices of beef liver 2 medium onions 1 glass of wine (250 mls) Salt and pepper to taste Olive oil Instructions: 1. Thinly slice the onions and place in a pan on high heat with the olive oil 2. Sautée the onions until they are a golden colour (not brown!) 3. Start to add a little wine, and watch for the pan to dry before adding some more wine. Keep doing this until the onions start breaking down in the pan.(You might need not need all the wine, so let the onions guide you here) 4. Now add your salt and pepper 5....

Food brings us together is a mantra I always believed in; we gather around the table and share food, conversations, jokes, emotions and some of our troubles.  By the end of a shared meal we feel  fulfilled both physically and emotionally.  This week recipe is a very simple and delicious cake, you don't need an electric mixer, a hand held one will do the job nicely      Lemon Cake 4 large eggs at room temperature  200 grams sugar 200 mil olive oil  200 grams strained yogurt  Zest of one lemon Juice of one lemon 280 grams all purpose flour One table spoon baking powder One packet of vanilla    In a large bowl mix all the ingredients, except the flour and baking powder, until well combined. Add the baking powder to the flour, stir with a fork to be combined.
